Ravioli di Spinaci

Getting ready to celebrate San Valentine? Do you want to have fun making heart shaped spinach ravioli?
The earliest known mention of ravioli appears in the personal letters of Francesco di Marco Datini, a merchant of Prato in the 14th century. During the same period in Venice the manuscript "Libro per cuoco" offers ravioli of green herbs simmered in broth and seasoned with "sweet and strong spices". In Rome, ravioli were already well known when Bartolomeo Scappi served them with boiled chicken to the papal conclave of 1549. Their fillings and their shapes vary according to the regions where they are prepared and in this class we are blending the old tradition with a new shape to celebrate "love".
On Sunday, February 13, from 2:00 – 4:00 PM, ICC instructor and native Italian, Romina Montanari, will lead this hands-on pasta making session at Mid-City Kitchen, a beautiful space in St. Paul.
Romina will demonstrate the process, and then it will be your turn to create some ravioli of your own! Each participant will have the opportunity to enjoy a glass of wine and will bring home an Italian-size portion of ravioli for 4 people.
All ingredients are included, but please bring 2 light kitchen towels and 2 flat pans to carry your ravioli home.

COVID-19 Policy:
This event will take place in-person at Mid-City Kitchen, 693 Raymond Ave., St. Paul, 55114.
All participants will be required to provide, upon entry to the event, proof of vaccination or a negative COVID-19 test within 72 hours of the event and to wear a mask (as per Executive Order of the City of St. Paul, at-home self tests will not be accepted for this event).
