Truffle Tajarin

Tagliatelle and Tagliolini (from the Italian verb tagliare, meaning "to cut") is a traditional type of egg pasta from the Emilia-Romagna and Marche regions of Italy. Tagliatelle are long, flat noodles that are similar in shape to fettuccine. Tagliolini is a delicate variety of tagliatelle that is thin, long and cylindrical, similar in shape to angel hair pasta.
Today we are making the Piedmont version called Tajarin and flavored with a typical product of this region: Truffle.
On Sunday, March 20, from 2:00 – 4:00 PM, ICC instructor and native Italian, Romina Montanari, will lead this hands-on pasta making session at Mid-City Kitchen, a beautiful space in St. Paul.
Romina will demonstrate the process, and then it will be your turn to create some fresh pasta of your own! Each participant will have the opportunity to enjoy a glass of wine and will bring home an Italian-size portion of Tajarin for 4 people.
All ingredients are included, but please bring 2 light kitchen towels and 1 large flat pans to carry your fresh pasta home.

COVID-19 Policy:
This event will take place in-person at Mid-City Kitchen, 693 Raymond Ave., St. Paul, 55114.
