What do they have in common with the ones produced in Italy? Products of the “highest quality” is the common goal amongst artisanal food crafted both in USA and in Italy. Local food artisans use the highest quality ingredients and Italian techniques to create quality Italian-flavored gourmet food products which are available on-site. Local artisans sometimes import the machinery and bring in experts from Italy to assure an Italian quality product. This unique partnership between the USA and Italy helps to produce small, craft batch high quantity Italian offerings in the USA. Join us as we meet Mike Phillips, owner of Red Table Meat, and observe him practicing his craft making his cold cuts in the traditional Italian way. Tour the Red Table Meat facility and learn how he makes traditional Italian “salumi” in Minnesota. Learn how his passion is expressed in all aspects of his production, from choosing and cutting the meat, to spicing, grinding, curing and aging. At the end of the tour you will be given take-way samples so you can taste these wonderful "salumi" cold cuts!
